This homemade healthy pumpkin spice latte is delicious and itβs topped off with homemade whipped cream! π€€
This recipe makes 3 cups of pumpkin spice coffee
In a pot add π
3 cups strong brewed coffee
1 1/2 cups unsweetened coconut milk
3 tablespoons pumpkin puree
1 teaspoon pure vanilla extract
1/4 teaspoon pumpkin pie spice
2 tablespoons honey
1 scoop of collagen powder
You can use a small hand blender to mix all of the ingredients together.
Simmer on the stove top for 3 to 5 minutes stirring occasionally.
While you are waiting for the coffee mixture to cook you can make your whipped cream topping.
For the whipped cream
One pint of heavy whipping cream
1 teaspoon pure vanilla extract
1/2 Tablespoon of pure maple syrup (the real stuff)
Whip until thick and fluffy.
Dairy free option for whipping cream
13.5 oz full-fat coconut milk, chilled
1 tbsp maple syrup
1 tsp vanilla extract
Pour latte into 3 cups and top with whipped cream and a sprinkle of pumpkin pie spice and cinnamon
