These health apple cider donuts are my favorite fall treat and it simply doesn’t feel like fall until we make them. We love enjoying them with a cold glass of apple cider and a favorite fall movie. You can still enjoy the season while having healthy treats.
Dry Ingredients:
2 cups almond flour
1/3 cup tapioca flour
2 1/4 tsp Apple pie spice
1 Pinch Kosher salt
2 tsp Baking powder
2 tsp Baking soda
1/2 cup Coconut sugar
Wet Ingredients:
1/4 cup Greek yogurt, plain
1/3 cup Applesauce, unsweetened
1 egg
4 tbsp melted grass-fed butter
1 tsp Vanilla extract
1/2 cup fresh apple cider
- Pre- heat oven to 350
- Heat half a cup of fresh apple cider on the stove top until it has been reduced to 1/4 cup. This takes about 25 minutes.
- In a medium bowl mix up the dry ingredients.
- In a separate small bowl mix up the wet ingredients and add the reduced apple cider.
- Make a well in the center of the dry ingredients and slowly pour the wet ingredients into the well and lightly fold them in, stirring everything together slowly until it is all incorporated into a thick donut batter.
- Pour batter into a large ziplock bag and cut off the tip. Fill your donut pan with the batter about 3/4 full.
- Bake the donuts for 10-15 minutes until a toothpick inserted in one of the donuts comes out clean.
- On a small plate add apple pie spice and sugar together. Brush each donut with melted butter and dip each donut into the mixture.
- Enjoy with a glass of cold apple cider!
